Called a ‘poelon a sucre’ these copper sugar pans are valued by pastry chefs and confectioners around the world who rely on this traditional copper pot to heat sugar or sugar syrups for making sweet treats and candy. The sold copper conducts heat efficiently to melt sugar without clumping and the pan can be used for preparing everything from pralines, caramels and hard candies to Italian meringue and buttercream frostings.

Most of the cookware we sell dates to from the 18th to the 20th century and was created by copper artisans like Mauviel, Atelier du Cuivre, Gaillard - Paris and Bourgeat and made for culinary professionals through E. Dehillerin, Paris, Allez Freres, Grand Magasins du Louvre and A la Mangere.
