A beautifully crafted copper Charlotte mold, which is also sometimes utilized for preparing a sweet or savory souffle, features a distinctive bucket shape with straight sides that may be slightly wider at the top than at the bottom. This elegant mold is typically lined with layers of sponge cake, ladyfingers, or buttered bread. It is then filled decadently with a luscious combination of fruit, mousse, custard, stabilized whipped cream.

Most of the cookware we sell dates to from the 18th to the 20th century and was created by copper artisans like Mauviel, Atelier du Cuivre, Gaillard - Paris and Bourgeat and made for culinary professionals through E. Dehillerin, Paris, Allez Freres, Grand Magasins du Louvre and A la Mangere.
