Antique French Copper Rolled-Rim Roasting Pans — Choose Your Size

Antique French Copper Rolled-Rim Roasting Pans — Choose Your Size

from $225.00

These are the pans I want in the kitchen as soon as autumn arrives. Fill one with chicken, sausages or whatever vegetables are coming in from the garden, add plenty of herbs and put the whole thing in the oven. One-pan cooking at its best — and copper that can go straight from oven to table.

Both date to around 1900, with beautiful rolled rims, tin-lined interiors and hanging rings. They have the low, open shape I love for roasting because everything actually has a chance to brown rather than steam.

Choose from:

  • Medium — 33 × 21 cm $245 - family size, 6 servings

  • Large — 44 × 27 cm $425 - larger for family over 8 servings or roasting a small turkey or large chicken with vegetables.

  • Origin & age — France, c. 1900. Dating is approximate and based on the rolled-rim construction, riveted hanging rings, hand-worked copper and overall construction consistent with French culinary copper of the period.

Both show the normal marks and irregularities of antique working cookware and are completely ready to head back into the kitchen.

What is it used for?

Hands down, probably the most used pan in my kitchen. I use it for roasted chicken every time because it makes for the best pan sauce after! It is also essential for ‘gratin’ recipes like potatoes and veggie dishes. The interior is superior in its non-stick characteristics but browns the ingredients perfectly!

Why we love this…

With the exceptional ability to conduct heat efficiently, copper cookware promotes precision and excellence in cooking. Traditional tin lined interiors are virtually non-stick when used correctly. Cooking with copper is the best option for everything from sauces to slowly cooked stews, braising and oven gratins. It is unbeatable for confiture and pastry making.
