Brochettes Kefta de Dinde et Courgettes

Too hot to turn on the oven? I am absolutely crazy about this recipe I discovered in ELLE à Table last summer. Ground turkey ‘brochettes’ are flavored with delicious spices and herbs, and aromatics like mint, cilantro, ginger, cumin and cinnamon. Be sure to make the Avocado - Crème Fraîche Dipping Sauce for this flavorful summer meal.


Part 1 - Mise-en-place

The basic ingredients

1 medium zucchini, grated
1½ teaspoons sea salt
1 pound ground turkey
2 scallions, thinly sliced (about ⅓ cup)
2 tablespoons chopped fresh coriander
⅓ cup chopped fresh mint
3 garlic cloves, finely chopped
2 tablespoons grated fresh ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground cinnamon


Part 2 - Method

To make the kebabs, soak 12 small wooden skewers in water for 20 minutes.

In a small colander, combine the grated zucchini and ½ teaspoon of the salt and let sit for 20 minutes. Squeeze out as much liquid as possible.

In a large bowl, combine the zucchini, ground turkey, scallions, cilantro, mint, garlic, ginger, cumin, coriander and cinnamon. If you find that your mixture needs help binding together - you can add 2 tablespoons of sesame paste or one egg - yolk only - blended with the meat mixture.

Divide the mixture into 12 portions, then, with damp hands, shape each portion around a skewer and flatten like an oblong burger.


Part 3 - Bringing it all together

Heat a grill or grill pan to medium-high. Brush the kebabs with a bit of olive oil, then grill for 8 to 10 minutes on each side, until cooked through.

Place the kebabs on a platter with fresh baby greens and cucumber, grated raw beet (or shredded carrot) cilantro, and mint. Serve with the dipping sauce.

Avo-Crème Fraîche Dipping Sauce

Scoop out one large, very ripe avocado and blend in small food processor with 1 tablespoon lime juice and a half a cup crème fraîche. (You can also use Greek yogurt). Add salt to taste.
