Details:
Savarin ring: 13 cm diameter. A Savarin is a small ring shaped cake that is decorated with custard, whipped cream and fresh fruit in the center ring. This little size is lovely for a small cake presentation for 2-4 people.
Large fluted cake mold: approximately 16 cm diameter × 15 cm tall, 19th century. This style of copper mold was traditionally used for individual presentation cakes, each one made to stand proudly among a larger display rather than as a single large centerpiece. The balanced proportions — almost equal in height and diameter — allowed for precise baking and elegant release, producing sharply defined forms intended for formal service. Hand-crafted in copper, molds like this were used in elite kitchens, including royal and state households, where refined technique and visual impact were essential. Today, they are prized for both their function and their sculptural presence, representing a level of craftsmanship and culinary tradition that is increasingly rare.
Cannelé molds are a cornerstone of French pastry tradition, designed to produce the crisp, caramelized exterior and custardy interior that define this classic Bordeaux cake. Made in copper for precise heat control, these molds were intended for repeated use and careful technique, and they remain just as effective — and admired — today.
