Early 19th-Century French Copper Sauteuse — c. 1800–1850
This beautiful old French sauteuse has all the character I love in early copper cookware. Its softly hammered surface, long iron handle and slightly irregular hand-worked construction make it immediately different from later, more standardized French copper.
At approximately 3.6 liters, it is also a genuinely useful pan. The wide cooking surface and straight sides make it ideal for browning chicken or vegetables, building a sauce, making a braise or risotto, and all those one-pan suppers that begin on the stovetop and finish in the oven.
Turn it over and you can see one of the best clues to its age: the base was made separately from the body and joined around its circumference, an early method of constructing substantial copper cookware that predates later industrial production.
